이제는 주목해야 할 나라, 러시아






얼마 전, 사모 펀드 투자 프로젝트를 위해 열흘 간 러시아 본사에 출장을 다녀왔다. 

러시아에 방문한 것은 이번이 처음이었으나, 짧은 기간 동안에도 러시아 외식시장과 소비자들의 매력을 발견할 수 있었다. 

러시아는 일부는 유럽인, 일부는 아시아인이 머무는 곳으로 다양한 식량문화의 조화를 엿볼 수 있는 나라다. 

필자가 찾은 주요 발견 사항을 소개하도록 한다. 




현재 러시아 경제는 2014년부터 2016년까지의 불황으로부터 매우 정체돼 있는 상태이나, 올해를 들어 조금씩 회복하고 있다. 이들의 경기는 주로 석유 및 가스 가격의 하락, 그로인한 루블화가치 절하, 여기에 서양 국가들의 제재까지가 세해 부진을 면치 못하고 있었다. 그러나 올 2017년도의 경제상황이 미미하지만 점점 호전적인 상태로 변화하고 있어 장기적인 관점에서 봤을 때 GDP 성장도 기대된다. 반면 실질 임금은 아직까진 높은 인플레이션으로 인해 지난 5년간 감소 추세를 보이고 있다. 경제 상황을 감안했을 때, 2014~2016년 동안 외식 시장 또한 매출감소를 겪는 것이 놀랄만한 일은 아니지만 조금씩 호전되고 있다는 것은 놀랄만한 일이다. 러시아 외식시장에서 성장이 뚜렷한 분야는 역시 패스트푸드와 테이크아웃 전문점이다. 풀-서비스 레스토랑이 높은 가격대 메뉴를 제공하고 있기 때문에 불황의 타격이 컸던 점에 비교하면, 값이 저렴한 QSR 체인은 경제의 영향을 덜 받고 있다. 국제조사기구인 유로모니터Euromonitor에 따르면 러시아의 총 소비자 식품 공급 시장은 약 17억 달러였으며, 1인당 평균 5.50달러를 소비한 것으로 나타났다. 



앞서 이야기 했듯, 러시아의 대표 QSR 체인인 McDonald’s, Burger King 및 KFC 등은 전체 러시아 외식시장의 50%를 차지하고 있으며, 이러한 성장이 시장경제에 매우 긍정적인 영향을 끼치고 있다. 비록 미국과 러시아가 예민한 정치적 상황에 놓여있지만, 러시아인들은 미국 레스토랑 브랜드를 찾고 있다. 초창기의 피자헛은 프랜차이즈 첫 러시아 진출로 경험 이 부족해 실패했지만, 이후 두 번째 미국 마 스터 프랜차이즈의 진출은 성공적이었다. 또한 여세를 몰아 로컬 브랜드들도 공격적인 성장을 이루고 있다. 떠오르는 피자 체인으로 Dodo Pizza가 주목받고 있다. 반면 Subway는 지난 몇 년간 1000개 점포에서 620개 점포로 줄어드는 등 폐점 위기를 겪고 있다.


전통적으로 차를 즐기는 러시아인이기에 커피 시장은 위축될 것으로 예상했지만, 생각보다 많은 커피 체인들이 모스크바와 그 외 경제도 시에서 적극적으로 매장을 확장하고 있다. 스타벅스도 발을 디딘지 얼마 되지 않았는데 빠 른 시장점유율을 보일 것으로 예상한다. 특징 적인 것은 러시아의 커피 하우스는 적절한 주방 기구를 갖춰, 핫 디쉬Hot Dish와 콜드 디쉬Cold Dish를 동시에 제공할 수 있는 풀-서비스 레스토랑의 콘셉트를 가지고 있다는 점이다.


흥미롭게도 Shake Shack은 높은 가격으로 호응을 얻지 못하고 있다. 카운터 서비스를 위해 가격을 지불할 만큼 그들의 주머니 사정이 아직 넉넉하지 않기 때문이다. 러시아인들은 저렴한 가격으로 햄버거를 즐기고 싶어 한다. 호황을 누리고 있는 또 다른 분야는 베이커리다. 러시아인들은 대부분의 유럽인과 비슷한 취향을 가지고 있어, 크루아상이나 달콤한 페이스트리와 함께 커피를 곁들이는 것을 좋아 한다. 모스크바와 상트페테르부르크에는 벌써 부터 훌륭한 제과점과 카페가 종종 보인다. 내가 경험한 곳 중 가장 좋았던 곳은 세인트피터 즈버그에 위치해있는 ‘부쉬Bushe’라는 베이커리 였다. 프랑스의 ‘폴Paul’과 비슷한 개념의 베이커리 콘셉트를 가지고 있다.(www.bushe.ru.) 매장 운영형태를 들여다보면, 어려운 경제 상황임에도 불구하고 매장 스텝을 찾는 일이 쉽지 않다. 스텝 회전율도 연간 150%에 달할 정도로 높은 편이다. 따라서 대부분의 레스토랑들은 파트타임 직원을 주로 고용하며, 경영진만 전임 인력으로 구성하고 있다. 매장 임대료의 경우에는 모스크바와 같은 도시는 매우 높지만, 보통 풀-서비스 레스토랑의 경우 20~25%, QSR 체인의 경우 15~20%를 넘기는 드물다. 


러시아 요리는 북유럽과 매우 유사하다. 따라서 러시아인들은 서양식 레스토랑의 운영을 주로 하는 편이다. 중국음식과 일본음식과 같은 아시아 체인도 있지만 필자가 머무는 열흘 동안 한 곳밖에 보지 못했을 정도로 확장이 더디다. 가장 많이 볼 수 있었던 곳은 TGI Friday’s로, 현재 러시아의 20개가 넘는 지역에 개발된 아메리칸 캐주얼 다이닝 체인이다. 러시아는 교육수준이 높은 인구가 1억 4000만 명이 넘는, 장기적으로 봤을 때 아주 성장가능성이 있는 시장이다. 현재까진 개개인의 소비 지출은 높지 않지만 시간이 지 남에 따라 개선될 가능성이 크다. 현재 해외시장 진출을 고려하고 있는 레스토랑 그룹은 성공할 수 있는 기회가 있다. 콘셉트는 ‘합리적인 가격의 서양식’이 좋겠다. 한국의 브랜드 중에는 파리 바게트, 뚜레주르와 같은 브랜드도, 현재 이미 인기를 얻고 있는 롯데리아와 함께 잠재력을 가지고 있는 브랜드라고 생각한다. 러시아는 현재 주요 매장 개발 모델로서 프랜차이징 시스템을 긍정적으로 보고 있기 때문이다. 


아직까진 미미하지만 장기적으로 무시할 수 없는 잠재력을 지닌 나라. 최악의 상태는 끝나 이제 새롭게 나아갈 가능성만이 존재하는 곳으로, 이제는 러시아 시장 진입을 고려할 때라고 생각한다. 흥미로운 한국의 브랜드를 시장에 널리 알리고 싶은 운영자 들은 러시아에도 관심을 가져보길 바란다! 







SLOW GROWTH BUT BIG OPPORTUNITY - RUSSIA


I just returned from a ten-day business trip to the Russian Federation, working on an investment project for a large Russia based Private Equity fund. This was my first trip ever to that country and I found the market and the people fascinating. Part European, part- Asian, the market is a blend of food cultures enjoyed by its population.  Here are my key findings.


The Russian economy is very stagnant and is slowly recovering from the 2014-2016 recession, primarily caused by declines in oil & gas prices, the devaluation of the Ruble and sanctions imposed by Western nations. 2017 economic conditions are improving but very gradually and the long-term outlook is for slow GDP growth. Real wages have been declining over the past 5 years due to high inflation. Given the economic trends, it is not surprising that the consumer food service market also experienced same store sales declines during 2014-2016 but it now showing some small positive growth.  Growth sectors are primarily affordable segments such as fast food and delivery/take-away.  The full-service segment of the market has been badly hurt overall given the higher menu prices.  The total consumer foodservice market in Russia was approximately USD 17 Billion with average spending of $5.50 per person according to Euromonitor research.



QSR chains such as McDonald’s, Burger King and KFC dominate the chain segment with almost 50% market share.  These chains are growing and very profitable. Despite poor political relations between the USA & Russia, Russian consumers love American restaurant brands. Pizza Hut was an early failure in Russia but is trying a second time with a new experienced master franchisee. The leading pizza chain is a local brand, Dodo Pizza, which has grown rapidly through franchising.  Subway has suffered big closures the past few years with store counts declining from 1000 to a little over 620 stores.


While Russians are historically tea drinkers, the coffee market is growing rapidly with many local and international chains aggressively expanding their stores both in Moscow and other secondary cities. Starbucks is a recent entrant and still has a small footprint but is expected to grow rapidly.  The majority of coffee houses in Russia are full service restaurants serving both hot and cold dishes with proper kitchens.  Interestingly, Shake Shack is failing due to the high prices of its burgers.  There are not enough Russians willing to pay these prices for counter service.  However, full service burger players are growing rapidly and Russians certainly love burgers when they are affordable. Another segment that is booming is bakery. Russians have similar tastes to most Europeans and love their coffee with a croissant or sweet pastry. There are many excellent bakery cafés in Moscow and St. Petersburg.  The best one I found was Bushe in St. Petersburg, a concept similar to Paul in France.  www.bushe.ru.


Despite the weak economy, finding staff is very difficult and staff turnover at the store level is very high, as much as 150% per year in many cases.  Most restaurant groups employ mainly part time staff and use full time labor as Management only. Rents are also very high in cities like Moscow and it is not uncommon to see rental costs exceed 20-25% of sales for full service restaurants and 15-20% for QSR concepts. Russian cuisine is quite similar to Northern Europe so it is not surprising that Western style restaurants do best.  There are small Asian chains, mainly Chinese and Japanese sushi, but they are not expanding rapidly.  I only saw one Korean restaurant during my entire stay. TGI Friday’s appears to be the only developed American casual dining chain with more than 20 locations currently.


Russia is an attractive market over the long term with a well-educated population exceeding 140 million. While current personal consumption expenditure is low, there is a strong likelihood that it will improve over time.  Those overseas restaurant groups that enter the market now and find good partners have the opportunity to succeed. Concepts preferably should be Western and very affordable.  Korean brands such as Paris Baguette and Tous Les Jours clearly have potential as well as perhaps Lotteria.  Another positive aspect of the market is the strong interest in franchising as a key store development model. 


Russia is quite a high-risk market but hard to ignore in the long term.  The worst is over, so now is the time to consider market entry. Operators of bakery, coffee & burger concepts should take notice!
